Fresh Apple cake
1/2 cup brown or palm sugar OR 2 mashed bananas, OR 1 cup apple sauce or any fruit or berry preserves
⅓ cup oil (if gluten free add 1 T)
1 cup buttermilk any kind of milk + 1T vinegar, I use almond milk)
1 tsp baking soda
2½ cups flour (I use a mix of gluten free home milled flour + ¼ c psyllium)
3 cups chopped apples (wild apples!)
1/2 c saskatoon berries (optional)
1 tsp cinnamon
1 T soft butter
1/4 cup brown or palm sugar
1½ c unsweetened shredded coconut
Preheat oven to 325c
Mix all ingredients together.
Pour batter into a 9×13 greased pan.
Combine crumble ingredients and sprinkle evenly over batter.
Bake for 45 minutes, dough will spring back when done!
Best served warm!
