1 c flour (a mix of grains, home milled) + 1 T psyllium husk
2 c flaked oats or mix of oats, spelt, barley
½ tsp baking soda
¼ tsp baking powder
pinch Himalayan sea salt
½ c butter (or melted coconut butter)
½ c coconut sugar
½ tsp vanilla extract
1 T black strap molasses
½ c dried cranberries, raisins or large chocolate chips if you want to be bad. If using raisins, cover with ½ c boiling water and soak 5 minutes before adding to batter with water.
Cream butter with sugar, egg and vanilla
Slowly beat in the combined dry ingredients.
Spoon and flatten with fork onto lightly greased baking sheet.
Bake 350 15 – 18 minutes until golden brown.
Let cool on cooling racks before storing in air tight container.
