Cornbread muffins

Another quick, delicious and healthy treat!

Makes 12

mix together:
½ mashed banana
¼ c oil
½ c plain yogurt
¾ c milk
1 egg
1 T baking powder
½ tsp salt

stir in:
¾ c cornmeal
1 c home milled flour (if gluten free add 1 T psyllium husk)
½ c toasted unsweetened coconut
1 small apple diced (skin on is fine)
1/8 c chopped dried cranberries

fill greased muffin tin ( or use paper muffin cups) ¾ full

bake 400 15 minutes until golden
let cool on cooling rack before storing in airtight container
freezes well
