Savory bacon cheese muffins

a nice treat for Sunday brunch!

bacon muffins_1057Mix together:
1c mashed squash
¼ c oil
½ c plain yogurt
¾ c milk
1 egg
1 T baking powder
½ tsp salt

 

 

 

stir in:
1 c cornmeal
1 1/2 c home milled flour (if gluten free add 1 T psyllium husk)
1 c diced crispy fried bacon bits
1 small apple diced (skin on is fine)
1 c med grated aged cheddar
1 tsp crushed rosemary
½ crushed chili pepper flakes-optional
1 T roasted unsalted sunflower seeds-optional

makes 18
fill greased muffin tin ¾ full
bake 400 15 minutes until golden
best served warm
